Chicken & Vegetable Curry - Yummy!

I made a chicken & veg curry tonight, was realllly good and very filling, heres how i made it (makes enough for 3 meals)

Ingrediants

400g chicken breast / Chopped Tomatos / Mild Curry Powder (or medium / hot if you prefer) / Leek / Brocolli / Onion / spinach leaves / carrot / low fat yoghurt

If theres anything in the above list i shouldnt be including please let me know as im pretty new to this

 

Finely chop half and onion and brown in a large frying pan with a small dash of light olive oil

Whislt they are browning dice your chicken breasts, once onions have softened add chicken to the pan and cook through

then add half a teaspoon of mild curry powder and stir until curry flavouring coats all the chicken pieces

once coated add in a tin of chopped tomatos, and your chopped veggies, stir well

this needs to be left for around 30 mins for your veg to soften and the sauce to thicken, keep checking and stirring

if you need to thin out the sauce simply add a touch of water as needed

taste and if you need to add more curry powder do this at this stage

just before you have finished cooking add in a tablespoon of low fat yoghurt and stir

 

Easy peesy and is really filling, plus you have a couple more servings to freeze for next time, my fella loves this curry aswell, only he has rice & naan bread too (damn him!!)

again if theres anything in here i shouldnt be including let me know but i found this a nice way of getting in plenty of veggies and still loads of flavour, i dont like many vegetables simply boiled / steamed (the ones i did like that way are not allowed on CS) so i found this a good way of getting a good serving of veg without really noticing it, for example im not a fan of leeks, and really dont like onions but in this they are softened that much you barely notice them in there

Just made this with mushrooms and spinach and it was DEVINE! Better than a take-away if you ask me!

Sounds fab!  i will also try this!

You could serve with some pan fried beansprouts as a rice alternative...i usually have a creamy curry, so this one will be a nice change!
